25g Gallo Green Sliced Olives
- 125g Puff Pastry
- 100g Calabrese spicy sausage
- 25ml Olive oil Infused with calabrese spicy sausage
Method of preparation
Cut the calabrese into very fine pieces or use a food processor.
Roll out the dough until it is 2 to 3 mm thick and cut into long strips.
Brush with the calabrese infused olive oil.
Cover with the calabrese sausage and the Gallo Sliced Olives.
Bake in a hot oven (220º) until the dough is cooked.
Remove from the oven, drizzle the remaining infused olive oil on top and serve hot.
By choosing calabrese spicy sausage infused olive oil I want to have a strong calabrese taste so that the fat of the puff pastry is not felt. This intense flavor is harmonised with the slight acidity of the Gallo sliced olives.
The Gallo products that the Chef suggests for this recipe can be substituted by other Gallo varities of your preference.
