25ml Gallo Cider
- 250g Fuji or pink lady apples
- 125g Yellow sugar
- 4 Scoops vanilla ice cream
- Mint, to taste
- Gallo Modena Balsamic reduction*
Method of preparation
Heat the sugar and when this starts to darken add the Gallo Cider Vinegar.
If you wish to substitute the yellow sugar for honey, use 75g of honey.
Cut the apple in slices, color in the caramel and stack them upwards, like a volcano.
On the top, place a ball of vanilla ice cream and streak with Gallo Modena Balsamic reduction and honey.
Decorate with mint leaves.
*For the reduction of modena balsamic: use a small pan, pour 2.5dl of Gallo Balsamic Vinegar and 75g of honey mixing until completely diluted. Bring to a boil and simmer gently on a moderate heat, to reduce the volume and thicken.
The Gallo products that the Chef suggests for this recipe can be substituted by other Gallo varities of your preference.
